This test is particularly beneficial for clients who react to gluten but are not improving fully on a gluten free diet. It includes 24 foods, 13 of which are known to be cross-reactive with gluten(18). Cross-reactive means the amino acid sequences are so similar that the immune system can react as if the patient is still eating gluten.
